Open or highlight a message in Apple Mail, select Save As… from the File menu (or type Shift-Command-S) and you can save the message as a plain text file, RTF text file or as the “Raw Message Source” complete with headers.

Select more than one email in the Message List and do the same. Mail.app will save them together in one file for you.
